“Thirty-six hours of skin contact before fermentation. A light, very bright green gold. Gentle and fragrant, with aromas of pear, citrus, chamomile and a subtle almond note. Nashi pear, melon, mint and chamomile, a slight saline and savoury thing that puts me in mind of chicken Twisties. It’s fresh, a fine grip to texture, bright acidity, a little nutty, has some juiciness to fruit, though it’s also quite tight and refined. Finish is long with a pleasant gustatory bitterness. Winemaking: 36 hours pre-ferment skin contact; 100% seasoned barrel indigenous ferment.

Aroma: Complex aromas of nachi pear, guava, green melon, spearmint, white flowers and hints of almond meal.

Palate: It’s light to medium bodied with a lovely mineral presence. Saline and balanced mouthfeel with flavours of pear, kiwi and green melon. Finishes with a gentle chalky phenolic grip….. perfect food wine!

Alcohol: 12.2 % v/v

TA: 6.8 g/L
